S’mores Ice Cream (Oreo-Crusted) Pie

Sick of winter and ready to look forward to the warmer summer months? If you are a big fan of ice cream, this is a delicious recipe that is easy to make, yet requires no baking. The nostalgic, familiar taste of a campfire s’mores is a favorite for many people. It has the three classic layers of a s’more including graham crackers, chocolate, and toasted marshmallows (in our case, cocoa powder drizzle)!

This pie will bring you back to those cold, winter days where you just want to sit near a campfire or fireplace, wrapped in a warm blanket with a cup of hot chocolate and devour chocolate and toasted marshmallows treats.

There is a twist to this pie however in which we added an oreo pie crust, rather than the traditional graham cracker crust. This will add an additional flavor to the s’mores pie.

  • 1 1/2 cups finely crushed grapham cracker crumbs (in my case crushed oreos)
  • 1/4 cup white sugar
  • 6 tablespoons butter (melted)
  • 1 package or quart of chocolate ice cream (we used Breyers)
  • 2 cups miniature marshmallows or large marshmallows (just enough to cover the top of the pie)

Directions:

  • Place graham crackers crumbs or crushed oreo crumbs into a bowl. Add sugar and melted butter, and mix well.

  • Transfer the mixture into a 9-inch pie dish and gently press the graham cracker mixture into the bottom and sides of the pie dish. When it is ready, refrigerate the pie crush for about 20-30 minutes.
  • Next fill the pie crust with chocolate ice cream. Smooth the ice cream with a spatula.
  • Place a ring of marshmallows around the inside of the crust and slowly cover the top of the ice cream with remaining marshmallows.
  • Place the pie into the freezer and freeze until firm (about 2 hours).
  • Use a propane blow torch to toast the marshmallows to create that brown campfire smoked look. If you don’t have a propane blow torch, sprinkle a bit of cocoa or chocolate powder over the top of the marshmallows to create that same effect.
  • Place the pie back tino the freezer to chill again for at least 3 hours.
  • Once it’s ready you can slice, serve, and enjoy!
